So, I’ve been making a major attempt to get healthy. It’s a tough slough, no gluten, no dairy, no sugar, no soy, no fun. But I’m feeling pretty ok, good even. I got a little creative last night, thanks to Martha Stewart, and made this grilled eggplant. If you want to try it…

You’ll need:
An eggplant
Cherry tomatoes
Fresh basil
Olive oil
Salt
Smoke seasoning
Feta cheese

There is no major science to this easy recipe. Cut the eggplant lengthwise in inch think slices. Leave them out to dry for about 30 minutes or, if you don’t have the time, pop them in the oven at about 175 degrees for a few minutes. Coat the eggplant with a thin layer of olive oil and add some salt and smoke seasoning. Then just grill away, about 4 minutes each side. Cut the tomatoes in half, add the basil and feta, add some olive oil and a pinch of salt. Add this mixture on top of the eggplant and enjoy. Yummy!
